Sausage and Gravy
1 lb Sausage
½ cup Flour
5 cups Milk
2 Tbsp Hot Picante Salsa
Preheat your Dutch oven with 18 briquets on the bottom.
Fry the sausage till browned. Remove meat from Dutch oven. Drain off all of the fat except for about ¼ cup. Add flour, stirring constantly until browned. Add milk and cook until the sauce is thickened. Add the cooked sausage and the salsa to the gravy. Stir well and serve over biscuits or toast.
Hash browns and Eggs
Frozen Shredded Hash browns
5-6 Eggs
1 Tbsp Butter
Ham or Bacon (Optional)
Ketchup
Preheat a cast iron griddle or oven over the fire. Fry up your hash browns with some butter until they are browned. Add eggs to hash browns and cook together, continually stirring until the eggs are cooked. Serve with Ketchup. If desired, wrap in tortilla for a breakfast burrito or add ham or bacon. This is a nice filling warm breakfast that hits the spot on a crisp outdoor morning.
Denver Omelet
1 cup ham, chopped
½ cup onion, minced
½ cup green pepper, sliced
12 large eggs
½ cup milk
1 tomato, chopped
1 cup cheddar cheese, shredded
2 Tbsp butter
Heat chopped ham in Dutch oven until browned. Remove ham and keep warm. Sauté onion and green pepper until vegetables are tender. Combine the eggs and milk in a bowl, add to this the onion, green pepper, and tomato. Melt butter in Dutch oven over 10 coals. Add egg mixture and cook until almost set. Arrange ham on top of eggs and sprinkle with cheddar cheese. To finish cooking the omelet, put as many coals as you can on lid and cook until lightly browned.
Camper’s Hashbrown Breakfast Pie
½ lb bacon, sausage, or ham
2 lbs grated raw potatoes or pre-packaged frozen hash brown potatoes (squeeze dry)
1 chopped onion
2 cups Monterey Jack or Colby Jack cheese, shredded
12 eggs
1 8 ounce jar of Picanté Sauce or Salsa (mild, medium, or hot)
Preheat the Dutch oven using about 20 coals only on the bottom of the oven. Brown your meat (bacon, sausage, or ham). Add your chopped onion and sauté until the onion is translucent. Remove these from the Dutch oven and drain on paper towels. Try to keep the cooked meat and onions warm until ready to put back in the oven.
Wipe off any extra grease from the Dutch oven and place back over the hot coals. Put in your hash brown potatoes and fry until golden brown. Once browned, add your meat and onions to the hash browns and reduce the heat of your oven to about 10 coals.
Beat your eggs in a separate bowl and pour them over your meat, onions, and potatoes. Cover with a hot lid (about 14 coals). Cook until eggs are almost solid and add some grated cheese. Continue to cook until the eggs are done and the cheese melts. Put your picanté sauce or salsa on top just before serving.
Hobos French Toast
1 cup flour
1 cup milk
1 egg
½ tsp baking powder
½ tsp salt
½ tsp vanilla
Bread
Blend all the ingredients together. Heat Cast Iron cookware like and add butter, shortening, or oil to fry French toast. Cut bread slices in half and dip them into the batter. Fry each slice until lightly browned on both sides. Top with jam, syrup, or other favorite toppings.
